Forrest General Wellness Recipe of the Month: Broccoli Slaw Spaghetti

Welcome back! It’s time again the Forrest General Wellness Recipe of the Month!! Summer has unfortunately come to an end and Fall is just around the corner. We wanted to share with you an amazingly, healthy spaghetti recipe that will have your family wanting more! Let’s dive into this recipe, you are going to LOVE it.

Brocolli Slaw Spaghetti

Prep Time: less than 5 minutes
Cook Time: 10-15 minutes

Ingredients (Serves 1)

■ 1 tsp Olive oil
■ 2 1/2 cups Broccoli slaw {about 1/2 of 12 oz. package}
■ 1/4 tsp Garlic powder
■ 1/2 tsp No salt added Italian seasoning
■ 2 TBSP Water
■ 8 oz. No-salt-added tomato sauce
■ 1/2 tsp Sugar (optional)
■ 1/8 tsp Salt
■ 1/4 cup Shredded part-skim mozzarella cheese
■ 1/4 cup Shredded parmesan cheese {optional}
■ 1 tsp Chopped fresh basil {optional}


1. Heat oil over medium-high heat in a medium skillet. Add broccoli slaw. Saute for 2 minutes.

2. Add garlic powder, Italian seasoning, water, tomato sauce, sugar {if using}, and salt. Stir well. Bring to a simmer and lower heat to medium-low. Simmer for about 10 minutes, stirring occasionally. Remove from heat. Stir in mozzarella. Plate spaghetti, and sprinkle with Parmesan and basil {if using}.

Nutrition Facts per entire recipe: 372 calories, 18.9 g fat (8.8 g saturated), 33.7g carbohydrates, 14g fiber, 19.2g protein

NOTES: Use 2 tablespoons parmesan cheese to cut out 55 calories and 4g fat (2.2g saturated) or omit.
